The granola bars sold in stores are often full of sugar. This recipe is gluten-free, sugar-free and suitable for vegans.
8 dried apricots + water
2 T flaxseeds + 10 T water
3 T Tasty Crush in any taste, for example Tasty Crush Fruit tastes very good in this recipe
0,5 dl pumpkin seeds or sunflower seeds
1,5 dl kvinoa puffs or other toasted sugar-free cereals
2 dl rolled oats
3 T honey
3 T olive oil
a pinch of salt
0,5 t cinnamon
1 banana, the riper, the better
Heat your oven up to 170 degrees celcius. Cover a baking dish (20 cm x 20 cm) with a baking sheet. Mix flaxseeds and the flaxseed crush with water and let them stand for about 15 minutes, until they start forming gel-like consistency. Add apricots into a small bowl and cover them with warm water.
Crush sunflower and pumpkin seeds if you like. Mix in all the dry ingredients. Mash the banana. Drain apricots and cut them into small pieces. Mix all ingredients in a big bowl. Put the mix into a baking tray and form it into a compact panel with a spatula or a spoon. Bake in the oven for 20-30min. Let cool for about 20 minutes before cutting into bars.
Tip: If you’d like your bars to remain juicy, store them in a fridge or a freezer. They become crispy in room temperature.
